Winter Kriek. For this Speling van het Lot, we blended a lambik that was macerated with sour cherries and winter spices on the coolship during that same Longest Night. On the Longest Night of 2019 on December 21st - as we do every year - we experimented around the brewhouse and the coolship. Aside from the three blends featured in this Twist of Fate-series, that day we also put some sherry barrel staves directly on the coolship to macerate in the cooling lambik wort. Belgian Strong Dark Ale. Oerbier, brewed in Esen by De Dolle Brouwers, is dark due to the mixture of different types of malt and hours of cooking time. Only 'Golding' bubble hop from Poperinge is used and all our beers are bottled with secondary fermentation. It is the first beer of De Dolle Brouwers and officially dates from 1980. The name refers to the originality and purity of the beer. The specific gravity of the wort is 1078, the alcohol percentage 9%. Oerbier has a slightly fresh acidity due to the yeast and lactic acid bacteria. The beer will experience a slight taste evolution and will become vinous. An extremely complex but at the same time very refreshing beer. It somehow resembles a hoppy gueuze with a distinct bitterness. Indeed, the Saisons were generously hopped for the well-known keeping properties of hops. Also, they were often dry-hopped, as is the case here. Saison de la Senne has been barrel-aged for three years before bottling. Amber in color, its nose reminds one of Lambic, with notes of fallen apples, wood, leather, and the typical funky character of the Bretts. In the mouth, a soft tartness is present, quickly leading to dryness. The aromas of the nose are completed by those of spelt and rye, quince, green gooseberries and a complex vinous character. An evolution of the very first Wadesda, a blend of Jambe-de-Bois and Cantillon lambic, making the Wadesda #9 a Tripel Saison: a stronger version of the original Saisons. She is amber in colour and has those typical characteristics of Lambic: woody with a strong funky nose of Brettanomyces, with quince and fallen apples. This is followed by white flowers, old kirsch and persimmon, and even a hint of curry leaves. A very winey character, as it should be! All of this blends perfectly with the classic aromas of tripels, like pears and bananas. Her strong alcohol percentage enhances her vinous qualities and gives a certain roundness to a finale that is quite dry and almost mineral.
