Huckleberry’s Wheat Ridge café is finally open, and to celebrate, we’ve got a weird one for you! We only have a tiny bit of Sipi Falls Hydro Honey this year, and this coffee will only be available at Huck’s 5 cafes and on our website! Okay, so wtf does hydro honey mean? This falls a bit out of our usual processing repertoire, so bear with us for a sec. In a normal honey process, coffee cherries are depulped, then the coffee seeds are dried with some amount of the sticky fruit, aka honey or mucilage, still on the seed. In this case, the team at Sipi Falls Wet Mill experimented with several variations to boost the complexity a bit. So in this case, these coffee cherries were held in-cherry for 48 hours in an anaerobic environment, then dried as a natural (cherry still on) for 2 days. Then the cherries were rehydrated, depulped, seeds fermented without water for another 12 hours, then finally laid out to dry on raised beds, without washing. Overcomplicated? Probably. Tasty? We think...

To be clear, this technically should be pronounced sauce-eh (or something like that, we’re coffee roasters, not phonetic spellers), and in Spanish, “el sauce” translates to willow tree. It’s also the name of a town in Southern Ecuador, the source of this delicious coffee. We’ve roasted coffees from Ecuador’s Loja Province in the past, but El Sauce is new to Huck, and it’s a different animal entirely. There’s plenty of the maple syrup and molasses sweetness we’d expect from this area of Ecuador, but thanks to a bit of experimental processing mixed in with the traditional washed process, we’re tasting fig and freeze-dried berries here, with some tangy brightness to boot. It’s been a minute, but we’re excited to have coffee from East Timor's Letefoho district and Cafe Brisa Serena back at Huck! Coffees from the Pacific islands can be round and sweet, but the wet hulled process that’s common in the region - in which the coffee’s protective parchment layer is removed before drying - lends itself to premature fade and vegetal, funky flavors. So, we specifically seek out washed coffees from the islands, dried in their parchment to preserve the goodness and keep out the funk. The tiny country of East Timor has been on the comeup the past few years, in large part by focusing on fully washed coffees. La Miel Natural Gesha, Peru

Yulisa Carahuallocllo and her farm, Finca La Miel in Chirinos, Peru, are the force behind this coffee. Yulisa grew up in coffee, learning from her father, Efrain, a well-known farmer in his own right. And Yulisa further cut her teeth as a quality control cupper in Origin Coffee Lab's Jaen central office and Chirinos purchasing station, tasting through the good, less-good, and tremendous, and gaining insight on how to produce the best-tasting coffee along the way. Once she decided to return to farming, she named her farm Finca La Miel, after the ground-dwelling bees and the honey (miel) they produce amongst the coffee trees. The farm sits at a sky-high 1870 meters above sea level, and Yulisa has planted a mix of traditional varieties like caturra, alongside small amounts of Gesha to diversify the goods coming out of La Miel. Santa Maria is back, and we're excited to have both Cooperativa de Caficultores de Dota (CoopeDota) specifically, and Central American coffees generally, back in the roastery! 2023 is the seventh harvest roasting up tasty goodness from CoopeDota and farmers in the village of Santa Maria, and this year's Santa Maria is among the best we've roasted. We're always excited to roast the goods from CoopeDota because the coffee is tasty, and the group has always been a sustainability leader in Costa Rica. In 2011 the cooperative produced the world's first certified carbon-neutral coffee, and is known for its work to reduce both its carbon and water footprints.  CoopeDota washes all of its coffees using an Eco-Pulper - a machine that uses significantly less water to remove the coffee's fruit and mucilage from the bean. It's been a couple years, but Alberto Ramos and his farm, Finca Entre Rios, make their return to Huck! We weren't able to buy Alberto's coffee last season, but this year our friend Alejandro - of CaféNor in El Salvador - helped us reconnect!  Alberto named his farm Finca Entre Rios, because it sits between the San Francisco, San Isidro, and Margaritozo rivers. He's been farming his father's farm since his teens, but purchased his own land in 2007.  Nicaragua is kinda a weird origin, where it's common practice to wash coffee on-farm, then deliver wet coffee to a central drying facility. In most other countries, it's more common to deliver coffee in cherry on the day of picking, or fully washed and dried. Cherry or dried parchment tends to be a bit easier to control, and in many Nicaraguan drying facilities/purchasing stations, there's a big risk that coffee will sit wet too long before drying, developing defects. Late winter into spring is a time for Southern Hemisphere coffees to shine, and we're stoked to kick off Southern Hemisphere Africas with Ruli! Dukundekawa Musasa is one of the larger cooperatives in Rwanda, and they group their producers into smaller cells. The Ruli cell also has yet another sub-group, the Rambagirakawa women’s group, made up of quality-driven female members of the cooperative. Beyond coffee, the group focuses on helping its members attain higher pricing, and re-invests its premiums into women’s health and education initiatives, agronomy support, and microcredit loans for its members. While our much smaller natural lot comes from a co-ed group of farmers, this washed coffee was grown exclusively by the Rambagirakawa group.
