𝗗𝗲𝗹𝘂𝘅𝗲: 𝗗𝗼𝘂𝗯𝗹𝗲 𝗕𝗮𝗿𝗿𝗲𝗹-𝗔𝗴𝗲𝗱 𝗜𝗺𝗽𝗲𝗿𝗶𝗮𝗹 𝗦𝘁𝗼𝘂𝘁 (15.7%) Originally made back in 2022, the base stout was meticulously designed for cask-aging, boasting a perfect balance of malt complexity + residual sweetness to embrace the nuances of extensive barrel-aging. Following fermentation + a lengthy cold conditioning, Deluxe initially matured in freshly-emptied Balcones Distilling Mirador Single Malt Whiskey Barrels. ~10 months later, we transferred the beer into hand-selected Balcones Distilling Baby Blue Whiskey barrels + let it rest for another 14 months. Overall, our dual cask-aging process enlivens the base beer, making the final product richer + woven with complexity. ⁣ Deluxe is meant to be enjoyed over hours or laid down in the bottle for years to come.

𝗕𝗮𝗯𝘆 - Cognac Bourbon Barrel-Aged Barleywine (12.6%): A collaboration with St. Elmo and our neighbors Still ATX!⁣ ⁣ Baby is a rich, decadent beer that shows its depth upon first sip. As it warms, new flavors develop and the nuances of the barrel (and previous spirits aged within) can be further appreciated. To simplify, the barrels that aged our base barleywine held Cognac first, and then Still’s Bourbon Whiskey after that.
