Famous Mushroom Soup

Blend. This soup was inspired by my grandmother who virtually invented her version after having a similar soup as a child and then later being influenced by the great restaurant in the plaza athenee in Paris. The restaurant was on the ave montaigne, number 25, and Marlene lived at number 12. One of her tricks was to use simple button mushrooms rather than those with a stronger flavor. This is an adaption of that recipe with adjustments for American ingredients. Comes with fresh dill as a garnish. Add croutons for extra crunch. Button mushrooms, chicken stock/broth, butter, wheat flour (rue), yellow onions, fresh dill, dry white wine, garlic, sea salt, freshly ground black pepper.
Carrot Ginger Soup

Gluten free. Blended. Yul brynner was a well-known actor who was probably most famous for playing the king in "The kind and i" on Broadway and the east-end in London, which he did for many years (over 5000 performances). The show was a musical, but yul wasn't a trained singer, and as a result he suffered from swollen vocal cords fairly often. Marlene decided to make him a curative soup to help him reduce inflammation. While carrots were the base, she also used ginger, garlic, fennel, cumin and turmeric to tighten the vocal cords, and reduce swelling. The result is a delicious soup that’s really good for you, even if you can't act or sing! In the mid 80’s my mother and i made batches of the stuff for yul when he did his last Broadway theater revival run on west 53rd street. Comes with grated fresh ginger as a garnish. Add croutons for crunch. Carrots, vegetable stock/broth, fresh fennel, yellow onions, turmeric, cumin, olive oil, butter, ginger, salt, pepper, parsley, garlic, and fresh chives.

Classic Borscht

Gluten free. Borscht is seemingly always associated with the Russian empire, but this famous beet soup was actually born in the Ukraine. From there it made its way throughout eastern Europe and on to the table of my grandparents. Marlene was German, and Rudi (my grandfather) was East-Czechoslovakian (although the border was exchanged several times with Russia.) this is our adapted recipe in the Ukrainian style and is about as hearty as it gets. We include a traditional dollop of sour cream, but it's optional. Fresh dill is also included as a garnish. Beets, beef, beef stock/broth, potatoes, carrots, celery, onion, butter, olive oil, red wine vinegar, cabbage, parsley, salt, pepper, garlic, and peeled tomatoes.
Northern Italian Minestrone

My father was a northern Italian, a part of Italy where the culinary concentration is on lighter fare, and they tend to avoid the heavier sauces and textures of southern Italy. This soup has everything in it you would expect but rather than being a solid mass, it is more delicate and can even be served as an appetizer. This is my grandmother Jane's recipe (my dad's mom) who was born in Torino. We provide a garnish of grated parmesan cheese. Elbow macaroni, chicken stock/broth, cannellini beans, Italian tomatoes, potatoes, carrots, celery, onion, butter, leeks, scallions, garlic, fresh herbs, spices, and a little parmesan cheese on top.
