Ahi tuna is portioned into cubic slices. Four slices per order are seasoned with salt, lime juice, and olive oil. The slices, arranged in a long rectangle topped with a thin layer of a harissa hibiscus paste (roasted fresno, carrot, celery, onions, garlic, canola oil, tomato paste, caraway, coriander, tomatoes, lime zest and juice, red onion, sriracha, marinara, hibiscus powder, and cilantro). The plate is garnished with hibiscus powder, Maldon sea salt, olive oil, and cilantro.
